Viral Dot Cake

There’s a reason this Viral Dot Cake has taken over our feeds, it’s impossibly easy, wonderfully nostalgic, and downright delicious. We gave it a citrusy twist using our Lemon Lime Agrumato Olive Oil, adding the perfect burst of fresh zesty flavour while keeping every bite incredibly moist and tender. Sweet, simple and guaranteed to disappear fast, this is the kind of bake you’ll want to make again and again.

Makes about 6 individual cups.

Ingredients

  • 2 cups almond flour
  • 1/8 cup Rich Glen Signature Extra Virgin Olive Oil
  • 1/8 cup Rich Glen Lemon Lime Agrumato Olive Oil
  • ¼ cup Rich Glen Honey
  • ¼ cup lemon juice
  • 2 eggs
  • 1 tsp pure vanilla extract
  • ¼ tsp baking soda

Topping:

  • 80ml Rich Glen Lemon Lime Agrumato extra virgin olive oil
  • 80g icing sugar
  • Sprinkles or hundreds + thousands

Directions

  1. Preheat the oven to 180°C.
  2. Line a round or square cake tin with baking paper and set aside.
  3. Add all the cake ingredients to a large mixing bowl and mix until well combined.
  4. Pour the mixture into the loaf tin and bake for 30–40 minutes, or until a skewer inserted into the centre comes out clean.
  5. Leave the cake in the tin for 5 minutes before transferring it to a wire rack to cool completely before slicing.
  6. Once the cake has cooled, use a cup, mug, or round container to press down onto the cake, cutting out sections.
  7. Mix the Lemon Lime Agrumato Oil and sugar together, then dollop over the cake cups.
  8. Add sprinkles to a plate and dip each cup into the sprinkles.
  9. Enjoy!
