Prep Time: 20 minutes
1. Melt the Dark Chocolate in the microwave in a large microwave-safe bowl on medium for 2 minutes, stir then heat for another 2 minutes. Leave to cool for 10 minutes. Stir in the Olive Oil and set aside.

I first came across a version of this reasonably healthy, rich chocolate mousse when I was an apprentice working with a very creative husband and wife team whom re barristers, but had a strong passion and love for fresh wholesome, beautifully presented food. I replaced the extra virgin olive oil with our orange oil as it gives the mousse a beautiful citrusy flavour also creating a smooth, soft texture with a super shiny finish. Hope you enjoy!- Ros
