Roasted Potato w/ Bacon, Lemon & Rosemary

Instructions:

    1. Peel potatoes and cut them in half for medium-size or quarter if large.
    2. Combine all other ingredients, add to potatoes and allow to stand 30 minutes
    3. Preheat oven to 180˚C.
    4. Roast for 1hr turn the potatoes gently and continue to roast for another 30 minutes.
    5. There should be plenty of leftover sauce which goes perfectly with fresh crusty bread.
    6. If you prefer the potatoes to be a little bronzed, grill in the oven for 5 minutes to crisp them up.

      Sticky Honey & Lemon Prok Chops

      Instructions:

          1. Place chops in a shallow dish and add the rest of the ingredients. Thoroughly mix and coat all parts of the pork.
          2. Marinate in the refrigerator for around 30 minutes.
          3. Place chops on the BBQ grill rack directly over medium coals.
          4. Grill, uncovered, for approx. 15 minutes or until chops are slightly pink in centre and juices run clear, turning once halfway through grilling.
          5. If you would prefer to cook in the oven then just place in roasting pan and bake at 160 degrees for 30 minutes
          6. Serve with mashed potato and fresh steamed broccolini with lashings of RG extra virgin olive oil.

          Tangy Lemon and Lime Chicken w/ Crunch Cos Salad

          Instructions:

              1. Pour Tangy Marinade over the chicken breast pieces in a large zip-top bag.
              2. Let the chicken marinate in the fridge for approx. 30 minutes.
              3. Grill chicken on preheated BBQ grill until cooked through (about 2 minutes on each side).
              4. Serve on a large platter and sprinkle with a generous amount of roughly chopped parsley.
              5. Make a crisp Cos Lettuce and “in season” Tomato salad simply dressed with lashings of RG extra virgin olive oil and Bush Tucker Dukkah.
